Difficult to get it in me...

So I have (relatively) recently ended a 4 month severe deficit and I'm back on Allpros beginners workout and loving it. However I'm finding it hard to get enough good food in me that I know I need (don't get me wrong I can smash a 15" pizza once a month but that isn't my usual eating). Been through the calcs with some helpful guys on here and I require roughly 2450-2600 to be in the nice threshold of having a slight surplus. but I find it hard to get that much food in me! for example my consumption yesterday was only around 1600...

Break': 2x bannana dipped in crushed pumpkin and pine seeds (try it, its on point)
Lunch: 2 tortilla wraps with mustard salad & chicken (w/ skin because its delicious)
Dinner: large bowl of vegetable chili bean soup
Snacks: hand full of peanuts and a single Maryland cookie (biscuits are my weakness)

I assume I should take my own advice and 'Insert chicken where ever applicable'. I'm usually a bit of a snack fiend so any simple ideas for good snacks I can munch at my desk would be really usefull. Weird hipster bulls**t food is welcome that s**t is delicious.
