Cutting Lunch Meals & Water Weight Digestion?

I'm new to cooking proper meals and I don't really know much about how the digestive process works, so I have two questions for all of you who are familiar with what I'm about to ask;

1) I am planning the meals for my cutting diet but I have absolutely no idea what I should be doing for my lunches. I seem to default back to peanut butter sandwiches on white bread all the time, and I think that is my weak point towards my fat loss goals. Would anyone recommend anything specific as a replacement? I have searched up many many different meals but I have hit a wall and become stuck.

2) So I've read that for every 1 litre of water you drink it can add up to 1 kg of weight until your body has digested/absorbed the water into your system. Does anyone have an estimate on how long this may take? I'm guessing it depends on metabolism but whilst I change my diet around I want to know if these sudden weight gains are because of new foods or the fact I have upped my water intake so drastically. I drink between 1.5 litres - 3 litres per day.
