Advice on cutting. 4 weeks in.

hey guys,
So I started lifting around 7 months ago. I was doing 5X5 SS, but after 6 months I started to plateau and decided that even though my strength had gone up alot I couldn't see any definition and i'd put on some fat.
So I thought i would start to cut, i worked out my nutrition values and changed over to Madcow's 5x5. I'm now in my 4th week my weight is steadily coming off at around 2 lbs a week.
I've notice in my lifts that my strength also taken a little hit for instance was squatting 3 sets 5 reps of 265 now on madcows I just managed to do 5 reps at 257lbs.
Am i on the right program for cutting?
I heard it was important to still lift heavy when cutting, is this correct?

My current weight 188.7lbs
Squats 1X5: 257lbs
Deadlift 1X5: 314lbs
Bench press: 1X5: 214lbs

Any advice is much appreciated.
