Steak tartare

Dying to try this. I have had rare steak before in the past but not this. I also do not like my ground beef like too moist but taking an actual grass fed steak pat dry and mincing it up with some salt, vinegar and maybe some minced onion, sounds appetizing.

Also wouldn't the vinegar and salt help with the possible bad bacteria https://www.ncbi.nlm.nih.gov/pubmed/9713753

??? Thoughts?
