Somehow not gaining fat?

In the last year or so, I lost around 35-40 pounds and ultimately ended up on lower calories for a long time. I was eating around 1,800 calories but wasn’t losing weight despite being in a deficit for a long time. I decided that I wanted to increase my calorie intake to gain muscle and increased them to 2,500 to be in a surplus. Somehow, my body fat has dropped and my weight has stayed the same even when eating more. Obviously, there was initial weight gain but it actually ended up being water instead of fat. How can I not be getting fatter if I’m eating 700 calories more than before? I immediately increased them rather than reverse dieting too.
