Calorie Deficit vs Sugar/Carbs before bed

What if my diet consists of fasting the whole day, then eating 1000 calories of cheesecake 40 minutes before bed. On one hand I'm in a humongous calorie deficit, on the other hand according to some articles the unburned carbs will turn into fat. So, what will actually happen to my body? Will I lose or gain body fat on this diet?
