Switching to different type of carbs please help.

So I have been following pretty much the same food cycle since 3 months and have great results. But now it seems to be too robotic and boring.
So currently
40% protein
30% carbs
30% fats

As long as I stay under that 30% is it OK to replace or add in sugar free wheat bread as soucre of carbs?

I think if I cut down certain veggies and lower my oat I can eat as much as 4 slices a day and still be below 30% carbs and stay full
