Stress and Weight

So I have been exercising pretty much every day for quite a while. I don't usually do much for the rest of my normal day,I mostly sit around the house and do homework and stuff like that. and I tend to workout for 2 hours every day. I do mostly cardio, and I then will also take 30 minutes or so on 3-5 of those days to do strength training workout videos, being that I am not able to access a full gym. Some days, like on the weekends I am much busier and I go out with my family and do more things during the day. Sometimes on those days, or like on one day when my mom and I spent 5 hours cooking food for thanksgiving, the next day I always gain 2-3 pounds. I know that is most likely water and everything, but it takes me quite a while to get it back down. I eat my same calories on those days, but I can tell i'm just tired and a bit sore. Could this be excess stress that is causing this weight gain? I also thought that maybe I was just eating too much, so I would decrease my calories, my weight flys up the next day, instead of dropping. Like one day I dropped it by 400, and the next day my weight went up 2 pounds, I was so tired and had no energy. I am not really sure why it does this or what to do about it.
