Nutrition question building lean mass

Im 28 year old female, 5'6, currently sitting at 164 lbs, athletic build. I recently hired a coach to get some help with reaching my goals. My goals being to lean out and gain muscle definition.
My meal plan includes 6 full meals. Aside from the first one which always consists of 6 egg whites and 3/4 c. Of a complex carb such as oatmeal.
Meals 2-6 are to consist of 8 oz of lean protein with 3/4 c of carb such as potatoes or rice. Veggies are free.

I force myself to get this down each day. I am not gaining weight. Losing around 1 pound a week to my surprise. However, week 3 weight stayed the same. Goal weight is 145-150.

The coach seems to feel like i am on track.

Its been 3 weeks so far. Am i being impatient? Just need to trust the process? Anyone else eating 6 full meals?

My workout routine includes: 3 (1hour) bootcamp style classes per week, weight training 4 days a week 30-45 min per day. 3 sets 10 rep heavy weight exercises.

Any input appreciated.
