Is it my diet or not?

Hey guys, I've been on a fitness journey for the past 5 years. Started at 408, dropped to 200, built back up to 240 where I am now.

I workout 6 days a week. 3 days of compound lifts, 3 days of brazilian jiu-jitsu.

I'm eating 3300 calories a day on a very strict diet:

Meal 1:

6 eggs
60 g flour / 125-135 g of cashew milk (pancake)

Meal 2:

.45 lbs of ground chicken
75g of jasmine rice

Meal 3:

.45 lbs of ground chicken
75g of jasmine rice

Meal 4:

.45 lbs of ground chicken
75g of jasmine rice

Meal 5:

16 sour patch kids
.45 lbs of ground chicken
1 slice of jalapeno cheese
75g of jasmine rice

Meal 6:

4 eggs
1 slice of jalapeno cheese


My joints and muscles just feel beat to hell constantly. Everything is tight and I am having to get chiropractic work done 2 times a week. My lifts haven't suffered, but I'm definitely not getting stronger. I'm averaging 7 hours of sleep a night, not due to choice, I have trouble sleeping due to medication for depression / anxiety.

My lifts are okayish but I'm really starting to get frustrated with my pressing ability. Current totals are DL: 535 / SQ: 375 / BCH: 260 at 240 bw.

I've been hitting bench the same way I've hit DL and SQ but it's just not budging. I do OHP also and I've always struggled with it, it just feels impossible to get stronger in this area.

Why am I feeling so lethargic / over trained? I'm eating enough to maintain my weight, I don't know why I can't still be increasing my strength considering I'm well below most guys in my weight division...
