So, in experimenting with the various foods I have in my dorm room (I'm out of dining hall money and am scrounging through the last week of the term by the skin of my teeth) I discovered something wonderful.
Eggs in a coffee mug is probably the simplest way to get a nutritious, high-protein snack in like five minutes. Also happens to be keto-friendly, if that's your thing. I just didn't happen to have any carb sources that I could get in my mug.
For mine, I literally just took the biggest coffee mug I have and mixed these things until it was about 3/4 full, to allow for the egg expansion.
Pepper jack cheese, torn into pretty small pieces
Three eggs
Baby spinach
Finely-diced yellow onion
Finely-diced green bell pepper
Trader Joe's Everyday Seasoning
Lean ground turkey
Throw it all together in roughly equal parts, mix it a bit, slap a plate on top of the mug and throw in the microwave for four to five minutes. Convenient, fast, healthy, high-protein, high-satiety, and tastes so much better than some of my other (failed) culinary experiments.
Since I'm sure that other people on here make mug eggs, and have been doing it for longer than I have, throw some tips down below. Or, try this out and let me know what you think :)
