Eating when hungry /or/ counting calories ?

Hello everybody, I need to explain something. Im trying to lean bulk, I calculated my TDEE (3300 kcals) so i add 300 and now it says i should eat 3600 kcals daily. Problem is that i have very different days, one day Im just lying on the couch and another day I go biking for 8 hours. I think its impossible to calculate my daily calories if my days are completely different everyday. Many people told me to "listen to my body", if Im hungry, then i should eat, but on the other hand, some people are telling me that hunger has nothing to do with "im hungry = body needs energy" and if I will be eating when hungry, then i will gain muscle, but a lot of fat with it too.

So my question, what is better option for me If im trying to lean bulk - 1.) Calculate my daily kcals for clean bulk (=3600), stick to it and just add or remove some kcals depends on what im doing in the day or 2.) Stick to 3600 kcals daily and listen to my body, if i eat for example 3300 kcals and i will not be hungry then i will not be eating and if i eat 3600 kcals and i will be hungry then i will eat.
