Frozen fish fillets?

I am not really good in cooking and very paranoid when it comes to my protein being cooked thoroughly
= as i cook the fish fillet, i break them to very small flakes (looks like canned tuna chunks) and cook them considerably longer than usual

Does anyone else do this and does this affect anything (protein content etc)? *weight of cooked fish shrinks up to 50% uncooked*
