Can't build muscle

I'm 18, 187cm (6 foot 1), weight about 85kg.

I cannot put on muscle. I train well and rest enough. Sleep plenty. Have a decently active job.

Even when I eat 4-5000 calories, I cannot build muscle. Yes I do roughly track how much I eat and it's that much. Plenty of protein, and love carbs. I know weight is just a number, but when i weigh myself after a piss (after waking up), my weight always goes up, but fat mass and muscle mass never seem to change. I use scales to measure this and yes it is inaccurate, but I weigh at the same time, after a piss, after waking up.

My weight will go up, but in big chunks, like it will spike to 87 from 85 the day before, and my physique has barely changed in the last 6 months. Fed up, trying so hard and not getting the results I want.
