Need help planning out daily caloric intake...

Most of the times I just fail to get in the required 3,000-3,500 calories within 16 hours.
Here is what my day is supposed to be like.

Wake up at 2:00-2:30 AM.
Leave house at 3
Get to work at 4:30AM
HALF AN HOUR lunch break around 9:00 AM.
15 minutes break around 12 PM
Leave work 1PM or 1:30 PM
Get home around 2PM-2:30PM.

By the time I get home sometimes I am too tired to eat again because my job starts so early. So the majority of the calories needs to be taken in during work hours..
I fall short due to appetite and time. Our breaks are short too.

What are your suggestions..?
