Confused on Diet Path

Hey,

I've been working out 3-4 days a week for several years and have found myself to be a hard gainer. I recently turned 40 and decided I wanted to see my abs. I've always followed a pretty healthy diet and have, for the past 3 weeks, restricted my calories to 1600/day with no alcohol. I try to get 150+ grams of protein. I've been working out 5 days a week and work as hard as I can at the gym. I do abs / legs or upper / 20 cardio.

I weighed 162 three weeks ago and am now down to 154. I see fat coming off, but I still can't see my abs. I'm 5'11. My handheld fat percentage device says I'm at 5.8% in the morning taken first thing. I really can't see myself getting into the 140's.

My questions:

1. I can lose 4-6 pounds overnight. Does this mean I have a fast metabolism?

2. Should I be doing the opposite of what I'm doing now? Meaning, should I be consuming way more calories, but just make sure they are clean? Am I doing myself a disservice by not eating enough to sustain the hard work I'm putting in at the gym?

3. Can I lose fat to see my abs and still eat a lot more? I'm thinking the answer is yes, here is basically what I eat daily:

Intermittent fast until noon. Just black coffee

lunch: salad with spinach, kale, carrots, cauliflower, broc****, tahini dressing, tomatoes, black olives, chicken. 1 cup quinoa. 1 apple

Snack: protein smoothie with scoop of protein (spinach, kale, banana, fruit (blueberries or mango or pineapple or strawberries) tbsp coconut oil

snack: protein yogurt and handful of nuts

After working out another green protein smoothie

Dinner: meat and side of veg

Snack: Grapes

80-100 ounces of water daily.

Should I just add in more chicken and broc**** to increase my lean calorie count?

Thanks for the advice!
