Vegetables?

At the moment, I am consuming three of each per day: cucumber, tomato, carrot. Works out to about 250 calories per day. I am also taking plenty of supplements.

My question is how essential are the vegetables? I was thinking to cut out the cucumbers and tomatoes, and just leave the carrots. My other concern is satiation then, as I am somewhat hungry, and that two vegetables hold plenty of water weight.

Fiber, vitamins and minerals wise carrot seems to be the superior one.
