Eating for Calorie Deficit

This question is for the ones who are counting their calories as well. Sorry if there's already a thread for this.

So (not so) recently, I've been counting my calories. It's generally working out fantastically since I found out that I've been severely under-eating and therefore not gaining any weight. It's been helping me keep track of things.
In a (again, not so) recent event, I decided to try out Intermittent Fasting. Generally, it's going well as well but I realize when I do, I can't hit my calorie goals.

I am 172cm tall and about 57kgs. After calculation, I found out I gotta eat about 2600cals.

Let me roughly breakdown how I eat:

Breakfast - skip
Lunch (or preworkou meal) - usually a home cooked meal (from meal prepping) consisting of at least 150g of cooked protein, carbs, and vege; which usually adds up to about 600cals
After lunch/workout "snack" - Weight gainer shake of 650cals
Dinner - I usually go to the mamak (as I'm from Malaysia), in which I'll just order taandori chicken and egg tosai; which adds up to about 600cals as well.

Based on these calculations, this would mean that I generally would have a deficit of about 700-800 per day.
Now don't get me wrong. Yes, I eat like this because I'm used to eating like this earlier on. But now my problem is that since I only have an 8 hour window. I get FULL after eating these meals. and Idk what to do.
Right now, I'm just eating junk like sweets cause it's usually the only thing that I can easily steal from my colleagues haha!
But I'd like to look for something more constant and "healthy".

Since I'm also an ectomorph (skinny fat, to be exact) and its hard for me to gain muscle, I also try to eat more fats and less carbs but it's not going very well as idk what on earth to eat.
Any advice please?
