Burning Fat problem

My goal is to shred fat!

I’ve read a lot about caloric deficit but I don’t know how to apply it! I’ve used more then 20 calculators to determine my maintenance calories and it’s wayyyy to high! It tells me my maintenance calories are 3000! It’s a lot and doesn’t make any sense!
I am 196 lb, 26 male, 5 10”. I work out 3-4 times a week. Can you help me out please?

If you can also help me find out how much protein I should take.
