Looking for some nutrition help (Daily Calorie Intake)

Was out of the gym on a regular basis for the best part of two years while doing some travelling and also an injury, but recently got back in to it.

I want to know some ideas on how many calories I should be aiming for a day. Doing my best to build muscle in attempt to transform my flab to slab. At present I'm aiming for 2500 minimum. I'm 117kg male, 183cm tall, 38 years old.

I work on the computer anywhere up to 12-14 hours a day, but I get to the gym most morning for a 1 to 2 hour work out. Training reasonably heavy and up to 2 hours (sometimes the last half hour is abs/light cardio)

Day 1 - Chest/Tris
Day 2 - Back/Bis
Day 3 - 30 mins HIIT - 30 mins ab work
Day 4 - Shoulders/Tris/Bis
Day 5 - Legs
Day 6 - 3 30 mins HIIT - 30 mins ab work
Day 7 - Rest

I was looking back at some entries when I used to track calories on Cronometer and some days I was eating well over 3,000 calories while lifting weights 1 hour twice a day. I lost close to 20kg back then but now I'm getting older and just want to get it right. I think I messed up my metabolism while travelling, drinking and not eating enough.

Any help appreciated.
