Bulking/Cutting vs Maintaing

I’ve noticed that I’ve been gaining strength but I can’t tell if I’ve been gaining mass or not. I’m on summer break right now and I haven’t really been able to eat as much as I want to or I’d eat my parents out of the house. With that I’ve started a cut until I go back to school, and then I’ll do a heavy bulk.

But I’ve been wondering, how do people maintain a physique and still gain muscle? And how fast do they gain muscle vs people who bulk and cut?

I’m sure this question has been asked but I couldn’t find anything.
