Hardgainer but afraid to get fat weight

I started getting into bulking a few months ago but I am now stuck on a plateau of 135lbs.
Up until now I just drank homemade gainer shakes and it worked for me, but now it seems I need more.

I currently eat about 2500~3000 calories daily and I can probably eat more snacks, nuts, dried fruits and easy carbs throughout the day to get that extra calories.

The problem is I'm trying to hit the sweet spot where I eat enough to gain muscle with minimal fat gain, I'm afraid to pig out because :
1) I've never had to lose fat so I don't know how hard it is for me/how fast it will be
2) I think if I eat lets say 4000 calories a day (which is 1000 more than now) I will have a significant fat gain compared to muscle, I see a lot of bulking guides that just say eating a lot of carbs and sugars (like fruit juice, honey etc) and I'm also afraid it will contribute a lot more to fat gain rather than muscle gain

What do you guys think? are my fears even rational? Can increasing my calorie intake (even with fruits and sugars) help significantly with muscle gain?
