When to start eating again?

If I reach my calorie-intake goal by 8 pm and and I get hungry again 2-3 hours later, Should I follow what my body's telling me and eat, knowing I'll be taking in more calories than what is recommended for proper weight-gaining or do I have to wait a certain amount of time until I eat again? My body clock is messed up since I work night shifts and I pretty much eat at any time of the day/night if there is food available.
I'd like to ask some specific questions regarding this topic:

1. Are there any rules regarding Calorie maintenance, when to start and when to pause eating or are the calories being continuously burned inside the body?

2. Eating huge meal portions in a short amount of time vs. Spreading them throughout the day. For example: Eating 1500 calories between 9 am-12 pm then eating the remaining 500 at 8 pm vs. regular meal times. Any difference or are the results the same?

3. (Unrelated question) How bad are the effects of taking too much sodium, let's say around 3500 mg and is there a way to negate/lessen the effects?
