How to count macros? Dry or cooked?

Hello,

I always thought that you have to weight dry pasta, rice... But when i saw the nutritional facts it said "When cooked"

Im trying to gain some weight, i divided a 500gr of cous cous in 5 portions to have 100gr per meal but i think i ate like 300gr

I know that it should have the same calories as water is not caloric, then why the macros of cooked and uncooked are different?
