I've been playing around with Cronometer and just realised that its possible to get all the daily micronutrients through sweet potatoes and white potatoes along with other foods such as chicken/milk etc. As for the lack of fibre, I take psyllium husk so my fibre needs are covered. I always hear people talk about the importance of leafy greens however I don't see why I should eat them if potatoes could do the same job while tasting better. As for vitamin K, I eat lots of kiwi fruit and also take a Vitamin D + K complex, which is apparently more bioavailable than the Vitamin K which is in greens.
It may seem like a lot of effort to avoid greens, as I have no trouble eating leafy greens in the short term, but I always find that I end up hating them in the end, as in I end up gagging which is not sustainable if I end up throwing up my meals. I have tried cooking in a numerous amount of ways to enhance the flavor but in the end I still end up hating the taste.
Besides their low calorie density for the amount of vitamins, I don't see any other reason to eat them if I can get my micronutrients elsewhere. What other benefits do they have?
