Need some Nutrition, diet advice

Sup,
So I'm 20 years old, I'm about 195 lbs rn, im 6'3, I have been working out every once in a while with breaks and stguff so not continously, and I just need some advice on what to eat and stuff.
I know working out is useless without having a consistent diet plan.
Goals : - Gain weight/muscle
- Keep bodyfat relatively lower a bit (not sure but im like 17-18% at most I would think)
- Just get bigger all around

So with me I know I'm suppose to eat like 2500-2700 calories to maintain my weight so about 3000 to gain muscle and all that good stuff along with weight,
now the hard part is I have to count out every single calories, fat, and carbs and protein, for 7 days a week, and I have no idea, no idea on how to count everything even though I check the labels and everything so I need a diet plan for each days with rotations and stuff, I mean this is what I eat most of the time right now :

Home made sandwiches : 1-2 sandwiches, cheesecream, ham, or cheese cream pepperoni and actual cheese, or i change the cheesecream to mayo sometimes,
I eat Western omelette for breakfast sometimes, about 3 eggs, I know that is good.
I eat cereal for breakfast other days,
Today I just ate 2 hot dogs with two bread rolls,
for dinner i usually eat Chicken breasts, with mash potatos most of the time,
Sometimes I eat beef for dinner, or pizza.
- sometimes I eat like little snackbars and whatnot, and some bananas and apples, but this is it most of the time unless i go out to eat food somewhere( i know to avoid fast food ), sometimes I go to chick fil a though but its the best of fast food. I do not like vegetables unless its on a cheeseburger, i know thats not good and need to change that. It is just hard fo rme to calculate everything to be 3000 calories everyday you know, if you guys have any ideas or tips please help a brother out lol.
