Nutrition plan looks good but might not be working as planned?

So I was born with heart disease and it’s now just taking effect so I had to change my eating habits and start working out. I’m currently getting between 2000-2200 calories a day, 225-250 grams of carbs, 150-175 grams of carbs and 50-75 grams of fat. Sugar is around 40-75 (no added sugars).

Iv been eating either oatmeal mixed with a scoop of protein, chia seeds and 2 scoops of almond peanut butter and occasionally a banana OR a 6 egg omelette (4 egg whites + 2 with yolk) with 1/4th a cup of cheese. Either with a cup of OJ.

Lunch will usually be 2oz of pulled pork of a bun or 4 oz of pulled chicken or 4 oz of ground turkey with a tortilla wrap to form a quesadilla with a 1/4th cup of cheese, either with a potato or 2.

Dinner is usually either a full can of tuna with 2 tablespoons of light mayo or a salmon fillet.

I drink around 24-48 oz of water a day, and take 1-2 protein shakes a day.

2 weeks ago I was at 20.1% body fat, weighted 163 lbs and had a muscle mass of about 73.0, yesterday was 2 full weeks since my diet and I went up to 20.9% body fat, dropped to 160 lbs and my muscle mass dropped to 71.2.

I’m trying to get to under 15% body fat, get between 165-170 lbs and gain about 10 lbs of muscle mass.

Am I doing something wrong? I would think 2 weeks would show positive results but everything’s going in the wrong direction and getting a little discouraged.

I do workout between 3-4 days a week
