Having trouble reaching my fat macro target

I'm new to this, meal prep, macro calculating... etc

I recently made a post here that guided me to the stickies (sounds dumb) so I go to calculating my macros and all seemed well. On paper I managed to fit in all my macros for the week inside my calorie limits (124g protein, 74g of fats all inside 1800 kcal)

But my mistake was most of the fats came from olive oil, which I thought I'd use up when cooking.

I separated the alloted oil into a diferent container (instead of eyeballing it) and now have quite a bit of oil left over. On average I'm 15g/day off on my fat macros.

Main question, any substitute to having to drink the rest of the olive oil?, most other foods while high in fat, would push me way over my calorie limit.

Side questions, recomendations for this not to repeat itself in the future? (Food prep advice, meal recomendations... etc)
