Coffee and New Food Choices

Sometimes I find when I drink coffee before my workout, I'm able to lift more than usual. Is this healthy and how should I approach this as an occasional drink?

Also, does anyone have suggestions for bulking? I'm pretty skinny and also lactose intolerant, so milk, cheese, and ice cream aren't options for me. (I know non dairy milk exists, but most of them have so much sugar and salt in them)
