How Do Cheat Meals Work?

I understand that cheat meals have many benefits, but I'm confused at the concept. Right now, I eat 2,000 calories / day while ~45-50% of them come from protein. This is currently ~1,000 calorie deficit and I've been doing pretty good with losing body fat and retaining muscle at a reasonable pace.

Does a cheat meal mean I can eat over caloric needs for that particular day? Or does it mean I should stay within the caloric goal and not worry about macros? How often should I partake in these cheat meals?
