Hardgainer bulking issue,please help!

Hi,

I have always had problems with gaining weight. I've been working out for years and as soon as I take a break I start to lose weight and muscles.
I have Ibs so I have to avoid certain foods and can't eat meals too large.
Anyway, this winter I started a 3-4 months bulk and gained around 9 pounds and put on solid muscle and started to lift heavier in deadlift bench press etc.
I noticed during the bulk that my maintenance intake was around 3000-3100 kcal.Anything under that and i'd start to lose wight and I needed around 3300-3400 to gain weight slowly.

After 2-3 months I started to feel terrible, I was never hungry,felt bloated and started sleeping terrible. I woke up every night after 4-5 hours of sleep and never felt like I got deep sleep. I usually woke up with heart palpations and just felt stressed out(not in my brain,I had no reason to stress atm) just that my body felt stressed.

During my bulk I did put on some fat around the belly but not excessively. Closer to the end of the bulk I started to do more cardio,running etc and I begin to feel a little better, started to sleep a bit better atleast.
Around this time I went to the doc and had blood work and I had low cortisol levels (137).

I went abroad for 3 weeks and stopped bulking and taking protien powder and stopped working out. I lost 12-14 pounds in just 3 weeks. Even though it sucked to loose the muscle I had gained I definitely started to feel better. Sleeping better,started to feel hungry again and no heart palpations.

I got back home and now that I was back to be skinny again:( I was motivated to start training and gain that weight back. The first couple of days felt great, I was hungry and I put my daily intake at 2900-3000 kcal to start slowly.
After 1.5-2 weeks I started to gain some weight again but now I feel terrible again, exact the same feeling during the bulk. Waking up every night,heart palpations,bloated,no hunger feeling and no energy.Woke up last night and felt the heart beating.
And It feels just terrible laying down, it does not feel good to be in bed, feels like I wanna move my body and I feel bored.
I never get into relaxing mode.

What can this be due to? That my body start to feel terrible as soon as I gain weight and lose weight so easily?
I appricate all help and sorry for my horrible english, I was way too tried to write properly.
