Weight GAIN

Over the past week or two I have read (and even commented on) threads pertaining to weight gain. For myself, this is an issue that I've struggled with for my entire life and now at 40 I'm just fed up! And there are a lot of ways to gain weight, unfortunately though the majority of them are not in the best interest of my health! I'm not someone who does not understand the basic principles that in order to gain you need a surplus of calories, nor am I unaware of the fact that a good way to gain both body weight and muscle is to increase proteins and fats as well as calories.

I have read forum posts that instructed someone in a similar position to myself to "follow and obese person around and buy what they buy"...to be honest, that comment upset me immensely. I know people...live with people...who are overweight and they actually don't eat all that unhealthy. I've watched someone I dearly love pack on a lot of excess weight due to medications and joint/muscle issues that began in their late 20's. And I have to say that I know first hand how much his weight bothers him...but trying to work out with psoriatic arthritis and early onset osteoporosis has resulted in quite a few ER visits! Thus, I understand the weight/exercise view from both ends of the spectrum and both are highly frustrating.

I have currently lost weight over the past few weeks, but not intentionally. I began my journey to gain weight and upper body strength about 2 1/2 weeks ago. Then, I weighed about 87 pounds and stand between 5' and 5' 1". Now my body weight is between 83 and 84 pounds. That is thanks to the majority of meals in my house being Keto for a month to try to help my husband. I am not in a financial position where I can actually afford to fix multiple different meals in my house and still be able to pay the rest of the bills. Meals are pretty much identical for all 4 family members. On a positive note, Keto is out and we are now trying something else to help my husband.

But what I have found that complicates my personal weight gain goal is other health issues. I can not consume large amounts of breads and other gluten containing foods because I have a gluten sensitivity. I also can not consume large amounts of sugar because I've been hypoglycemic since I was 22. If I consume too much sugar and don't balance it with a good amount of protein then inevitably my blood sugar will decide to take a nose dive :( I have no desire for my hypoglycemia to turn into type 2 diabetes, so I take this issue VERY seriously. I mean granted, as long as I can recover from a sugar crash then consuming sugar won't kill me, but not correctly keeping my sugar balanced can ultimately land me on insulin. I despise needles...and don't care for the other health consequences of diabetes.

So, besides beans (not the biggest fan of the things), eggs, PB, whole milk, rice, and oatmeal what are some other inexpensive high calorie foods that I can look into? I'm already adding olive oil to pretty much all of my servings of veggies, adding butter (and usually PB) to oatmeal, and coconut oil in coffee along with some hot cocoa is actually really good :) My goal is to increase proteins, fats, and preferably healthy carbs.
