I've been dealing with a weird issue lately that occurs mostly in the mornings. For background:
Age: 26
Gender: Male
Body type: Athletic
Weight: ~180lbs and 11-12% BF (clearly visible abs)
No apparent health issues
Most mornings I wake up hungry and my fasting glucose is usually in the 70's. I'll then eat breakfast and 30 minutes later I end up getting a hypoglycemic response where my glucose is even lower. I've tried to "catch" any apparent blood sugar spikes by testing even 15 minutes after a meal, but I never see any crazy spikes...literally just my blood sugar going DOWN gradually after eating. I'm not diabetic, but T2 diabetes does run in my family...however my glucose responses to other meals usually later in the day are quite normal (like 110-130 around 30 minutes to an hour post prandial).
Blood work I've had done doesn't indicate diabetes - my A1C is in the healthy range, and my fasting glucose is always low or normal as well.
I've tried tracking this on both a regular omnivorous and plant based diet and seem to get these responses a few times per week regardless of the diet. My breakfast this morning was:
12oz sweet potato
3.5oz blueberries
1/4 cup coconut milk full fat
1 serving pea protein
2tbs almond butter
1 cup mung beans
Coffee sweetened with stevia
Around 1000 calories, 100 grams of carbs, 55 grams of protein, 35 grams of fat. (I eat around 3000-3500 calories per day to maintain weight since I work an active job on top of exercise)
Other breakfasts look similar to this, or I'll perhaps have 1 cup of oats instead of sweet potato. I'd get the hypoglycemia too even if I had used regular yogurt instead of coconut milk or eggs instead of beans.
What gives here? I've read that hypoglycemia is usually preceded by blood sugar spikes, but I'm never able to catch one of these spikes on a glucose monitor and I'm eating a good mixture of complex carbs and hardly any simple carbs. The meals are also very fiber rich which would slow the blood sugar response. It's literally just a gradual lowering of blood sugar until I'm down to like 67-70 and feel light headed.
It's weird to me too that my meals later in the day elicit pretty normal glucose responses and no crashing blood sugar even if they are composed of similar or even the same foods.
TL;DR - breakfast causes hypoglycemia, but other meals don't. Can't ever catch a blood sugar spike. Meals are made up of complex carbs from whole foods, plenty of protein and fat. No evidence of diabetes from lab tests or fasting glucose.
