I've been a skeleton my whole life, I'm 5'11 at 130-140 lbs even with a heavy diet. The four main things that are holding me back are my vegetarian diet, the sheer amount of green tea that I drink, my job nearly requiring me to walk roughly 14k-20k steps a day, and my ridiculous metabolism. Lately I've been eating tofu, potatoes, barley, leafy greens, sprouted beans, nuts/nut butter, fruits, dairy, and whole wheat bread daily to no avail. My weight plateau'd probably around 10th grade, and I'm now 23 at the same weight. When I was eating meat, it didn't make a difference, and when I was drinking smoothies every single day (which probably had at least 1000 calories each), I never rose above 140. Should I start fasting to lower my metabolism, or is there something I'm completely missing? I probably eat about 2000-2500 calories a day, but I think its offset by the cardio I have to do at work, and the fact that I drink 3-5 cups of green tea every day, which I won't stop doing because I love it. Its really hard to gain muscle with my current weight, and while I'm definitely not weak most people just assume I am because I look like I basically don't eat.
