Ideal weight for height/body type

Hi,

I'm 23 years, 5′10 (178cm) and 176lbs (80kg). When I started working out I was around 143lbs (65kg). I have a really fast metabolism and huge troubles with gaining any weight, so when I started eating properly and enough, I started to gain weight.. However, I never really calculated anything, be it carbs, calories etc. I just knew that I'd be around 2500 calories or so and that i need around 120g protein. My routine was rice, tofu and vegetables, plus breakfast (oatmeal etc.) and snacks (nuts, greek yoghurt and sorts). I always get all the proteins, but with the calories I am not so sure.
I go the gym 4 times a week (upper, lower, upper, lower), but rarely do cardio.

I am very happy about the progress I made so far, but I am afraid, that if I continue gaining weight, that the progress will not be visible anymore. I read that 176lbs is a good weight for my height, so I was asking myself, if gaining more weight is even beneficial for me? Or do I have to cut fat now? Unfortunately I don't know what body fat percentage I have (i took a calculator online and it said around 19% but idk if thats accurate) When cutting, will it even visually make an impact at my current state?

I don't know how a guy my height should look like at my weight, and i know that every guy looks different with the same weight, but currently im stuck at how to continue. My goal is to not to have a super low body fat, but still to look defined and and thicker than my ever-skinny body from 2 years ago.
How do I calculate how lesser I have to eat to reduce my body fat?

It'd just be great to have an opinion of people who are experts more or less on this topic.
