Diets for eliminating belly fat? What have you guys done?

So I've been reading a lot about how macronutrients can in fact be tied to different body results and that it truly isn't just calories in vs. calories burned, as I'm sure everyone on here knows. However, I at least used to think there was some nuance and wiggle to that. Like, "Oh sure I ate a whole bag of mini Butterfinger today, but hey at least it was under my daily calories." (Jk, I know that's bad, I only did it once. I more mean like having a good, but "carb-y" day. Whole grain toast and some egg whites for breakfast, tuna and carrots for lunch, rice and beans for dinner. No huge portions, not unhealthy, within my calories).

But I'm not getting visible fat reduction results in my gut.

Something I found that's particularly interesting is that people who tend to gain fat in their gut, likely have some level of insulin resistance, and this for various reasons causes the fat to concentrate in the middle, and this fat makes them diabetes and heart disease prone. This insulin-resistance and gut fat gain seems to be heavily tied to carbs and not even just excess carbs. So before asking a classic "critique my diet" post, I'm also genuinely curious where those who have successfully targeted belly fat have found success. What were your diets? What did and didn't work for you?

I'm personally about to re-embark on a low(er) carb diet. I say re-embark because late last year I started on a low carb AND 1200 calorie diet. This was a mistake, I was so freaking fatigued all the time, I wanted to die. So I went to see a nutritionist-- their advice was meh. Basically, "oh you look fine, it's all in your head, calorie counting is bad for mental health, you need to eat more, especially carbs, just eat whole grains, veggies, fruit, and lean meats in these portions and you'll be healthy." Yeah well, that didn't work for what I wanted at all. Still have a pudgey belly and other fat around the middle and I can't stand it. My stomach looks bloated/round and gross all the time in spite of having a decently strong core, being naturally muscular, being active, at a healthy weight (122 lbs), and body fat percentage (~25%, but I need to lower that for sure). I'm 5'1".

I'm not at all going to ditch the whole grains (I like them) and fairly lean proteins, but my new proposed diet is: 100 g carbs, 100 g protein, 60 g fats = 1340 calories.

What do you guys think?
