Troubles eating clean and hitting 3000 calories or so

So I figured there's not much of a need to give you a background, so: I'm tryna bulk, I figured how easy it is to reach certain macros and calories eating certain foods, but my problem is that I don't want (and I won't) to eat dairy (maybe a mozzarella cheese here and there) AND nuts, seeds, peanut butter, dried fruits in general, and rice. What foods would you suggest for me?
