Why should you slowly increase calories when transitioning from cut to bulk?

I'm starting a bulk after a long cut and plan on eating a surplus of 300-500 calories. I was reading through older posts and saw a lot of comments saying that you should slowly increase cals by 200 every week.

I was thinking I could just eat around maintenance for a couple weeks and then increase cals by 200 a week until I'm gaining 1lb a week.

OR

Should I just start with a 500 calorie surplus?
