Why do some people say carbs = joint pain and inflammation?

As in the title, I'm just wondering what the mechanism would be in the body to cause something like joints to be painful for some people when they eat more carbs, or just general 'inflammation', etc?

I understand water retention, but I've never seen data explaining why joints or other tissues would hurt just because people consume carbs. Never once having experienced anything close to this myself, curious where the science is on it...
