How to find that balance

I am trying to slowly and steadily gain weight, I had an eating disorder in the past. However I feel like have overcome that a little and I am ready to start to gain some muscle. I am 17 years old 5'5 and 127lbs (58kg). I started eating in a surplus, (2500 calories) However, I hit that number but I find myself being to strict on my diet and then end up binging a lot.

Does anyone have tips so I can find that balance between foods and not end up binging all the time. Thanks
