In Urgent Need of Help

Okay, I am really hoping to get some help with my problem. It has lead me to create an account on here to try and get some help.

I am a big guy, 6'6" 225 pounds, who plays college baseball. As such, nutrition and the weight room are huge aspects to my sport and performance. Over the last three years, I have had a continuing problem with my body that I have not been able to fix with consistent results. So here goes.

I go to the gym 5 to 6 times a week to workout, for a little over an hour. 3 of those are heavy lifts, mostly leg and back. In between I do core and cardio workouts. After my workout, I will go to a facility to throw (I am a pitcher). The throwing workout is not as grueling, but I do get a good sweat going. Here is my problem. Right when I start to workout, my whole body gets a little shaky. Not like hold out my hand and its rattling type shaky, but a subtle shakiness in my muscles when I lift. My vision gets slightly blurred, and my head feels a little weird after I finish a set. I can continue to lift, but it feels like I am fighting the weakness in my muscles, rather than pushing them and building strength. It feels like I can't push the weight to the point of maximum effort, because I feel this shaky weakness in my legs, when I do box squats for example. I have a protein bar after my workout and then go to throw. The same thing. My vision is slightly blurred, I feel weak, my body feels out of sync, and like I can't push myself to the max. My body just doesn't feel good.

This has been happening for years. When I compete in a game, I get this feeling. For a while I thought it was because my endurance was not high enough. Over and over I would get discouraged because no matter how hard I worked out, when it came to game time, I still had this same shaky, weak feeling. Its frustrating because I know how hard I could push my body, but this weakness holds me back.

My most recent suspicion is my diet. In the morning I have 5 eggs, two wheat toast, and 3 bacon. After my workout, Ill have a protein shake and some more toast with peanut butter. For dinner it always varies, but often there is meat and some sort of carb. What Im thinking now is that Im not getting enough carbohydrates. I read somewhere that with my weight I should be eating anywhere from 600-900 grams of carbs a day. That is crazy! The toast I eat only has 12 grams a slice! So just yesterday I went to Costco and got oatmeal and frozen fruit. So, this morning, I had the same meal described above for breakfast, but this time I added a full cup of oatmeal with fruit. That should add some carbs, right? 2 hours later I go to the gym, same weakness. I was able to box squat fairly heavy, but I still didn't feel like I want to. Same thing when I went to throw after. Im at the point where Im thinking maybe sports just isn't for my body, maybe I have a specific makeup to where I can't perform at the level I want to.

I also take creatine and a multivitamin everyday. Other than that I eat the food described, and I stay hydrated. Also before my workout and after food, Ill have 3 shots of coffee. I dont drink any sports drinks, or any amino acid supplements (dont know much about them).

Please if anyone could take the time to try and help me, I would appreciate it so much. I need to be able to compete at a high level, and Im willing to change my diet or whatever it may be to get there.
