Critique My Diet

Hi, I need comments and opinions on my diet.

Stats: 42y male, 5ft8, 180lbs (down from 190), 23 – 24% BF,
My goal is 165lbs @ 15% while maintaining muscles
Workout routine:
Monday: Abs, glutes and legs
Tuesday: Chest, shoulders, triceps
Thursday: Abs, back and biceps
Saturday: 30 minutes running, thereof 10 minutes warm-up and 20 minutes HIIT

Macros: 100C, 100F, 160P and 2,000 cals, which yields an average daily deficit of approx. 650 cals. I do feel I am bit low on the carb side. I eat the same calories regardless if I am working out or not.
I have started 18/6 interim fasting. Meal 1 at 4pm and meal 2 after the gym at 9pm.

Food I eat:

Meal 1: linseeds, cereal, olive oil, raspberry, cottage cheese, juice (10oz carrot, apple and spinach mixed juice) – 600 cals
Meal 2: Potatoes, rice, salmon, soy kebab, cheese, nuts, lettuce, cucumber, olive oil, dill sauce, tzatziki, protein shakes, nuts (different combinations on different days) – 1,400 cals
I don’t eat meat - only fish.

Please let me know your thoughts.
Any food I should drop and replace with something else?
Also, when is the right time to consume the carbs?
Should I cut the calorie intake those days I am not working out?
