Just got back from squatting after work and quickly threw together a random dish from some food I'd recently prepped supplemented with some limited groceries, and it's unexpectedly delicious. The aim was primarily to be a wholesome and nutritious post-workout meal that hopefully tasted alright, but the flavors are combining together surprisingly well.
1 baked chicken breast cubed
3/4 dry-measured lentils
1 can of diced tomatoes (undrained)
2 fresh habanero peppers finely chopped
~1/4 cup cheddar cheese
I added that all together in a large bowl and added salt, garlic powder and chili powder and it's like a hearty stew. The earthiness of the lentils pairs excellently with the sharp floral flavor of the habanero, while the chicken adds some texture and volume and the tomato tempers both while stewing everything together along with the cheese.
All flavor aside, this is a huge serving of protein, low-glycemic carbs, fiber, micronutrients and is relatively low calorie to that end, so I will be making this again deliberately in the future.
Anyone else randomly make something just to check the box on dinner hoping it would be okay but turned out to be surprisingly good?
