Bread vs rice for overall strength/energy/gains

When you look at the diets of strongman Brian Shaw or Thor for example, they eat rice with every meal.
Of course they need to reach their daily calories/proteins etc, so they eat very often.
But my question is if it matters what they eat, as long as it's clean?

Instead of a cup of rice they could also be eating bread instead.
Does certain food help more with strength/gains or is it just personal preference?
Maybe they eat rice so much because it might be easier to digest for them.
Of course they take a ton of supplements as well, but just wondering.

Right now i have my rice or potatoes for dinner. But everything before and after that consists always of bread.
Bread with sandwich meat, peanut butter etc.
My progress pretty much halted these days. So i'm thinking of switching up my diet.

Do you think substituting bread with rice, and perhaps instead of sandwich meat/pb, i can use chicken breast, ground beef and fish for more protein?
I already reach 1.5 grams of protein per bodyweight lbs though. So i doubt getting more protein will do the trick.
Then again i also doubt it matters whether someone eats rice or bread since both are carbs.
Maybe i just need to train harder or be more patient.
