Going over bulking calories

So I'm in a bulk,
Maintenance calories are approx 2300-2400, bumped it up to 2700 weight has fluctuated like crazy, blew up 8lb on the first week, lost it, then added another 6lb on the second week, after reading forums it seems it could be water weight (with being on low carbs for a few months) anyways bulk has been going steady. Today I've went over by 800 calories- protein and carbs are spot on, fat is double as I've had chocolate cake and cream 😂 my question is, would you reel it in for a couple of days due to being so far over my bulking calories or just stick to normal?
