Should you track your caloric intake and nutrition accurately for both the off-season

I've been tracking my calories and nutrition DAILY on MyFitnessPal for a while now, but it have become extremely time-consuming, causing me to eat meals late and even to skip meals, my food cravings have increased and I frequently surpass my daily target due to hunger, is it necessary to track your caloric intake and nutrition as a 20 years old natural wannabe bodybuilder (2 years of serious training as of today) during both phases (the off-season and contest preparation) or do you, or the natural bodybuilding community even count calories?
