I'm curious if there's any harm in eating vegetables that are no longer fresh. For example, if you've got some celery in the fridge that's starting to wilt, is there any harm in eating it? Obviously I understand that fresh would be better, but if there are no signs of rot/mold, are there any problems with eating vegetables like that? I've always thrown them out, but it just seems wasteful if there's nothing dangerous about it.
