Recovering From Binge Eating Disorder - Need Input & Clarity On Nutrition & Goals

Looking for constructive input on my situation I will try to give concise background points followed by my question.

Lifelong history of bulimia & binge eating disorder, no bulimic episode in over 14 years.

History of extreme dieting, 800 calories a day, 2000 calories a day, Juice Fasts, fasting OMAD, keto, Intermittent fasting, what little results I had were lost quickly.

Got on top of things mentally started thinking rationally and it occurred to me to seek a place for nutritional advice where they actually knew what the “f” they were doing. Found myself here on Bodybuilding.Com.

Not looking to be a bodybuilder just lose weight in a healthy way that works.

My stats Male 51 Yrs old 6’2” 290 lbs. would like to lose 60 for health reasons.

Read stickies, did BMR Calcs…holy **** my whole life I have been under eating my caloric needs…starving myself then binging.

Read minimum for weight loss for me 2300 calories. .7 grams protein, .4 grams fat per lb of body weight. Dispersed the rest of calories over healthy carbs like Oatmeal, Fruits & veggies.

Weigh and track everything in my Fitness Pal. 85% of my food is clean single ingredient.

This works I am hungry but not ravenous…I think I can do this…feels sane.

1st Week lost 1.8 lbs.
2nd Week lost 1.7 lbs.
3rd Week Gained 1.5 lbs.

Question: I feel like the weight should be falling off. Is it possible that my lifelong abuse of my body has ruined damaged my metabolism and my body just is no longer going to respond like I see it does for everyone else?

Anyone have a history like mine and similar experience that can lend some insight as to what I should realistically be doing
