So I've always read that mushrooms are packed with vitamins and minerals. But today I got home from the store and looked at my mushroom package, and it says no vitamins or minerals except some potassium.
That made me curious, so I started looking up nutritional facts for plain white mushrooms online. Suffice to say, if there is any consensus whatsoever about the nutritional content of regular old white mushrooms, I can't find it online. Some websites show that white mushrooms contain non-negligable amounts of 14 vitamins and minerals.
Imagine I was stranded on a desert island with nothing but mushrooms. This difference in nutritional content is the difference between imminent death due to malnutrition or potentially being able to survive indefinitely.
Can anyone help shed some light on this for me?
