"Healthy Keto" Examples and Long-Term Outcomes?

I was wondering if there's any data from people who maintained a "healthier" version of keto that limited saturated fats. It seems hard to fathom what people would even eat and I love carbs too much to even know much about a traditional keto diet, but I suppose people could source all their fats from things like salmon and avocado? By that same token, are there any there any long-term studies on perpetual keto dieters. I know reactions to SFAs may vary and certainly bodily cholesterol responses to dietary cholesterol are very individual, but I'd love to know what the outcomes are. I'm aware that keto benefits in the short-term if it leads to weight loss, but I'm more interested in studies done in subjects at maintenance.
